Spaghetti – Crafting a New Family Tradition

Okay, I know, spaghetti is not a new idea, but here is the story of how it became a new tradition for our family. We were all in the throws of the Thanksgiving and Christmas season about five years ago. We had literally just moved out of our second home and into our third, which we lovingly dubbed The Rollins Ranch, for our last name, and because we buy, restore, and sell vintage cars, including Volkswagens (the horses or “horse-power”), but that’s another story. Although our family has some really awesome cooks, we were sort of tired of the usual meals we offered around the holidays. So my husband decided he would serve a spaghetti recipe he had been tweaking to his family when they came to celebrate Christmas with us. It ended up being a delicious meal we have grown to crave all year long. We usually just serve it over thin spaghetti noodles, top it off with lots of different cheeses, and serve it with warm garlic bread and red wine. It’s pretty amazing. I hope you will take the recipe and try it. Feel free to put your own twist on it.

1 lb ground beef
1 lb Italian sausage
1 small onion, chopped
3 -4 garlic cloves, minced
2-3 stalks celery, chopped into ribs
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
2 cups water (for a long simmer)
3 teaspoons basil
2 teaspoons dried parsley flakes
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4-1/2 teaspoon crushed red pepper flakes
1 1/2 teaspoons brown sugar
1 container fresh mushrooms (at simmer)
1 bay leaf (at simmer)
1/4 cup (or so) red wine
1 lb thin spaghetti, or pasta of your choice
cheddar, mozzarella, Parmesan, or other shredded cheese of your choice
Chop Onions
Chop Onions
Sweat Onions in Olive Oil
Press Garlic then Mince
Cook Minced Garlic with Onions
Chop Celery then Add to Onions and Garlic
Add Salt
Add Pepper
Ground Italian Sausage
Combine Sausage with Mixture
Ground Beef
Combine Beef with Mixture
Add Diced Tomatoes
Add Tomato Paste
Add Tomato Sauce
Add a Can of Water
Fresh Basil
Chop Basil
Add Parsley
Brown Sugar
Add Red Pepper Flakes
Add Mushrooms and Bay Leaf
Add Red Wine and Let Simmer for a Couple of Hours.

You can also add meatballs for an extra treat!
If there are leftovers, you can freeze them.
